"I Ain't Afraid of No Ghost (Pepper)!" Sabuku Sushi features the newly crowned World's Hottest Pepper - the Trinidad Scorpion Pepper

July 13, 2012

Spicy food, like any intense culinary flavor, is an acquired taste. Hot sauces and dishes delivering extreme heat have developed a cult-like following, with disciples of the movement constantly looking for the next hottest thing. Enter Sabuku Sushi Head Chef Zach Stofferahn’s new Suicide Special that features the World’s Hottest Pepper, the searing Trinidad scorpion pepper.

This diabolical specialty menu offers three levels of mouth scorching flavor that will challenge any sultan of the Scoville Scale!

First stop is the Thai Won On Roll…panko crusted sea bass, spicy crab, kaiware sprouts and red onion inside, with spicy tuna, crunchies and scallions on the outside. Topped with yuzu wasabi bin dressing and a Thai chili, garlic and ghost pepper aioli.

Next up is the Sabuku classic Naughty, Nice & Everything Spice Roll…spicy tuna, thinly sliced jalapeno, tempura green onion and kaiware sprouts inside, with yellowtail and avocado on the outside. It’s topped with spicy ginger aioli and their wildly popular XXX sauce (made with ghost peppers, Thai chilies, habaneros, serranos and jalapenos marinated in a vinegar/sugar base for 10 days.

And for the very brave, the third offering is chef Zach’s latest crazy creation On Death Roll…tempura fried soft shell crab, cucumber, kaiware sprouts and yama gobo inside, with blackened albacore and avocado, drizzled with their own ponzu sauce and topped with green onions. It’s flavorful yet benign on its own, until you add the Suicide Sauce made from Trinidad scorpion peppers (the world’s hottest pepper) blended elegantly in a roasted tomato puree that also combines garlic, red onion, cilantro and a slight hint of citrus.
