For the first SoundBite event of 2017, Chef Nick is collaborating with the talented Davin Waite of Oceanside's extremely popular Wrench & Rodent Seabasstropub, as well as Andrew Bent - whose most recent stint was cooking at the Noma pop-up in Tulum, Mexico. The three chefs will prepare a six-course dinner paired with six original Todo Mundo songs performed for guests while they enjoy their meal.
As with all of his SoundBite dinners, in the days prior to the event, the participating chefs create their courses while listening to select tracks so that each plate is inspired by a specific song and its meaning. Menu highlights include a fried oyster with frisee, jalapeño remoulade, chorizo vinaigrette and pickled serrano peppers, and a smoked rainbow trout with sour grass, nasturtium, wild fennel, roe, and toasted cumin coriander flax cracker. There will also be two beverage pairings. The event will begin at 6:30pm.
