Get A First Look At Little Italy's New Born And Raised Steakhouse Menus

September 13, 2017

CH Projects biggest project to date - the $7million, bi-level, modern steakhouse Born and Raised - is expected to unveil in San Diego's Little Italy tonight, and we have the first look at the menus. Check 'em out!

First announced in October 2015, CH Projects (Ironside Fish & Oyster, Soda & Swine, Underbelly, Noble Experiment, Craft & Commerce, and more) took over the former Nelson Photo Supplies building at 1909 India Street in Little Italy, tore it down, and has been in the process of constructing a 2-story, more than 10,000 square-foot, indoor/outdoor restaurant with the professional assistance of local designer Paul Basile of BASILE Studio.

BaR Steak Diane
Born & Raised was built to pay homage to America’s greatest dining institution, the classic steakhouse. The luxury steakhouse has spared no expense, from rooftop to bathrooms, and will offer a mid-century architectural influence with a formal dining room with plush Italian leather booths, a downstairs bar, and a stylish rooftop bar and lounge with its own urban garden.

The culinary program at BaR will be in the hands of longtime CH Projects chef/partner Jason McLeod, with the help of the company's culinary development manager Chef Phil Esteban. The steakhouse-centric menu will also a variety of grass-fed cuts from Kansas-based Creekstone Farms, as well as steaks to-go from a retail onsite butcher station with a glass-encased dry-aging room. Steaks will be prepared in a classic Hestan steakhouse broiler or charcoal Spanish Josper oven. Born & Raised will also offer a variety of tableside services, from beef tartare, to caviar, to salads and omelets, and even Wagyu steaks seared within the dining room using a binchotan charcoal grill. They will also offer a tableside dessert cart with a variety of offerings from pastry chef Elizabeth Olson.

BaR Tournedos Rossini
Longtime CH Projects mixologist Anthony Schmidt will be in charge of the bar and has put together an incredible bar menu, offering a huge selection of Scotch whiskey, an amazing wine list curated by in-house sommelier Rafael Peterson, a champagne menu that will include suggested caviar pairings, a list of classic and craft cocktails, and pretty much any liqueur one would want. There will also be a specialty cocktail cart devoted to table side martinis, Manhattans and Rob Roys. Of course, nearly 20 local and popular craft beers will also be offered on tap from behind the bar.

Born and Raised is reportedly opening tonight, although we received word that a delayed city inspection may push the grand opening until tomorrow - Thursday, September 14. The restaurant is located at 1909 India Street in Little Italy. For more information, check out the menus below.
