Jsix Restaurant Introduces a Stiff, New Culinary Cocktail Menu

The beverage engineers at Jsix Restaurant at Hotel Solamar have taken the building blocks of classic cocktailing and created a menu that positions them at the apex of today’s trends. Time-honored methods and techniques have come together with the freshest ingredients and an imaginative approach to produce a list of 12 quaffable delights that appeal to a wide variety of guests. Available now, the new cocktail menu (copied below) has spirited folks stirring with excitement.  Expect bold aromas, strong flavors and surprising combinations fused with Jsix’s made-from-scratch philosophy.

The origin of these vintage-inspired drinks is comforting and familiar, but the avant-garde interpretation refreshes them. The Maple Old Fashioned uses Maker’s Mark sweetened with Vermont maple syrup and crowned with a thick cut slab of bacon, while the Emily Post plays on a classic champagne cocktail, replacing sugar and bitters with Crème de Violette and fresh blackberries.

Prepping the Empire State
Jsix turns up the heat with some blazing new selections. The Empire State, containing a swig of house-infused vanilla Bulleit bourbon, is served with Noilly Pratt red vermouth and fresh cherries pickled in an original Jsix spice blend. The drink is completed with a flamed orange twist, which releases the peel oils and subtly enhances the flavor. Before Fire is a Don Julio Silver cocktail with fresh lime, house made lavender syrup, dry shaken egg white and a mescal rinse that imparts a defined smoky flavor.

Garden fresh botanicals, fruits and vegetables add bright and earthy notes to vodka and gin-based concoctions. Fennel syrup, made on-site, sheds a savory light on the Fennel Collins, while the Serrano Gimlet uses gently muddled Serrano chilies to spice up this staff favorite.

“Jsix has always taken an artisanal approach to food, so it was only natural to create a bar program that complements Chef Graves’ menu,” said Assistant General Manager and Beverage Engineer Lauren Lathrop Williams. “ San Diego’s palate is getting more adventurous, so we decided to infuse Jsix’s personality into good drinks that utilize beautiful, fresh ingredients from area farms and our rooftop garden.”

Jsix, located in the East Village and Gaslamp Quarter of San Diego, provides a warm and inviting location where professionals, friends and families can feel comfortable. Perfectly situated adjacent to the playful and inviting Hotel Solamar, Jsix is capturing diners’ hearts with Chef Christian Graves’ sincere and innovative cuisine.

Passion is at the core of Jsix, and it shines through in everything from the bustling atmosphere to the warm service to the craft of cooking with the best local ingredients and making many items from scratch. Chef Graves creates dishes that have gained the respect of fellow chefs and admiration of Jsix diners.

Jsix will also offer a Market Whim cocktail every night where bartenders are free to unleash their inner artisan and create original or classic drinks with whatever is in season.  Jsix also plans to offer patrons an array of nightly specials for weeknights to begin August 19th (copied below), as well as a current weekday happy hour featuring a wide array of $6 items including fresh made pastas, house cocktails, and also $3 drafts - Monday through Friday from 4-7pm.

Monday - Build your own Martini night - use the graph from things you like to help you build your own signature martini from 5-9pm.

Tuesday - Local Beer Flight Night - from an IPA hop challenge to Belgium brawls, come enjoy one of the chef's flights of local beer from 5-9pm.

Wednesday - 1/2 off bottles or waive corkage fee - enjoy half off selected bottles of wine or BYOW and skip the corkage fee with purchase of an entree from 5-9pm.

Thursday - Flight Night - a bartender's whim of tasty flights - from cool white wines to hot cocktails, nothing beats a little sampler tray of drinks from 5-9pm.

Friday - Fortified Fridays - Specials on ports, sherries and rotating vermouth cocktails from 5-11pm.
