Chef JC Colón Joins The Patio Group

January 29, 2018

Chef JC Colón, who was previously slated to take the helm at the long-delayed STK restaurant at Andaz San Diego, has joined The Patio Group.

Chef JC Colón will add his culinary flare to the menus at downtown San Diego's new Hotel Republic, which has three dining venues operated in collaboration with San Diego hospitality and real estate firm The Patio Group. Colón will oversee the hotel's lobby bar, Trade, the rooftop venue Topside Terrace Kitchen & Bar, and fast-casual The Patio Marketplace.

Colón received a Grande Diplome from the French Culinary Institute in 2007 and began his culinary career at Nelson Blue in New York City’s financial district. Upon moving back to San Diego, he honed his craft working under Chef Joe Magnanelli at Cucina Urbana as a sous chef before taking the position of Chef de Cuisine at the Urban Group's now-shuttered Kensington Grill. Chef Colón then took the lead at Coronado's Leroy's Kitchen + Tap before moving on to the Executive Chef role at Brian Malarkey's Searsucker Del Mar. Most recently, Chef Colón was the Chef de Cuisine at now-defunct Flour & Barley in The Headquarters at Seaport Village before being tapped to oversee the culinary operations at STK steakhouse, Andaz San Diego's new dining concept that is nearly two years in the making.
