Set to open as early as this June, Swagyu Burger & Chop Shop will be one part butcher shop and one part full service burger restaurant. The butchery will serve cuts of A5 Wagyu and other specialty meats and the restaurant will offer a menu of smashed burgers, katsu sandwiches, and cooked steaks customers can choose directly from the meat counter. There will also be a dedicated area where Brown will serve his special multi-course meals. Swagyu Burger & Chop Shop will serve beer, wine and specialty sake to compliment it's food offerings.
Chef Brown started his culinary career in Garmisch, Germany, in 1999 at the age of 18 as a dishwasher in a hotel, falling in love with food and the chef-life. After two and half years in Europe, he returned to Los Angeles to attend Le Cordon Blue culinary school. Chef Brown opened Gardner Junction in West Hollywood in 2015, which closed not long after. Locally, he was the head chef of Brockton Villa in La Jolla in 2006-2007 and won KAABOO Del Mar's Rock N' Chef competition in 2016. When Steve Brown returned to San Diego from a stint in Los Angeles in August 2016, he announced that he would be opening The Shipping Yard restaurant in Imperial Beach and several other restaurants, but most never came to fruition.
