Brought to San Diego by Wild Thyme Restaurant Group - the team behind Shorebird locations in Newport Beach, Palm Desert, and Sedona - the new Seaport Village outpost blends modern coastal charm with panoramic views of San Diego Bay. Spectrum Space Design was tapped to transform the 4,000-square-foot space into an airy, stylish dining destination with indoor and outdoor seating, a second-story dining room, and 360-degree bayfront views.
Executive Chef Bert Bonnarens, whose résumé includes time in kitchens around the globe, leads the culinary program alongside Wild Thyme’s director of culinary development, Jay Bogsinske. The menu is rooted in sustainably sourced seafood, wood-fired meats, and seasonal produce, with signature dishes like salmon mignon, swordfish tacos, Chilean sea bass, and smoked Duroc pork chops. A selection of sushi rolls, housemade tortillas, and standout cocktails - like the fan-favorite passion fruit martini - round out the experience.
Originally slated to open in fall 2022, Shorebird’s debut was delayed multiple times due to construction and permitting hurdles. But for fans of the group's breezy, upscale take on coastal cuisine, the wait is finally over.
The long-anticipated coastal eatery is currently in soft opening with a limited menu, but will fully launch this Friday, August 1, 2025. Open daily from 9am to 9pm, Shorebird is now welcoming guests for brunch, lunch, and dinner. With sweeping water views, a vibrant scratch kitchen, and a sleek redesign of one of Seaport Village’s most recognizable buildings, Shorebird is poised to become a key player in the area’s ongoing bayfront revival.
