According to a recent liquor license transfer filing, restaurateur Garo Minassian is opening a second branch of his Parc dining concept within the Del Rayo Village Shopping Center in Rancho Sante Fe. The space has been home to Dolce, a contemporary Italian restaurant, since 2010. Minassian took over the space on July 1 and will soon rebrand it to become the new outpost of his approachable French brasserie.
Parc's expansion marks a return to familiar territory for Minassian, whose restaurant career in San Diego began in the Del Mar and Rancho Santa Fe area in the late 1980s with the opening of Scalini’s. Now, nearly four decades later, he is poised to once again bring elevated European hospitality to North County.
The new Rancho Santa Fe location, dubbed Parc Lounge, will become Parc Bistro's second outpost, following its 2016 debut in Bankers Hill in the former Croce's Park West space. That flagship location quickly gained a loyal following for its classic French brasserie fare, warm ambiance, and thoughtful service.
Minassian, who hails from Montreal and trained at the Culinary Institute of Florence, has long combined his passion for food and hospitality with a talent for creating community-focused dining spaces. In a 2024 interview, he reflected on the importance of building lasting relationships with patrons and giving back to the neighborhoods he serves. "Witnessing the restaurant become a place where families gather, celebrations unfold, and memories are made is truly fulfilling," he said.
Though official details about the Rancho Santa Fe location’s concept and opening timeline have not yet been announced, it is expected that the new restaurant will follow Parc's signature model - blending approachable sophistication with timeless French cuisine, curated wines, and attentive hospitality.
