Tijuana-Based Quimérico Café To Close Its North County San Diego Location After Just a Few Months in Business

After only a few months in operation, Quimérico Café, the Tijuana-born brunch and coffee concept that opened this summer in Encinitas, has announced it will soon close its doors.
In a message shared with its followers this week, the café thanked the Encinitas community for its support, writing: “We’re closing our doors soon, and it’s been a true pleasure.” The post noted that the café will serve beverages only during its final week, offering 10% off at its coffee bar, and hinted that a new location is already on the horizon.

Located at 345 S. Coast Highway 101, Quimérico Café made its U.S. debut in July 2025, bringing with it the imaginative brunch flair that made the original Tijuana locations a local favorite. Known for vibrant dishes like matcha pancakes, banana-bacon French toast, and colorful chilaquiles, the brand had aimed to infuse Baja creativity into North County’s competitive brunch scene.

The Encinitas opening marked an ambitious cross-border expansion for founder Diego González, who launched the first Quimérico in Tijuana in 2019 and quickly grew it into one of Baja’s most celebrated breakfast destinations. The U.S. branch was developed in partnership with Tyche Food & Beverage Consulting, a San Diego firm specializing in helping Mexican hospitality brands enter the U.S. market.

While the café didn’t specify the reasons for its early closure, its social media message suggests plans to reopen elsewhere in the region. “Stay tuned - a new location is on the horizon, and we can’t wait to welcome you again soon,” the post reads.
