The new Vista bakery opened on Friday, September 18, at 30 Main Street, Suite 180, in the Vista Village area. The company now lists the location as open daily from 8:30am to 8pm, less than three years after Le Déoré debuted the first brick-and-mortar Desserts By Clément on Garnet Avenue in Pacific Beach.
The opening completes an expansion first reported by SanDiegoVille in May, when Le Déoré revealed he was simultaneously developing new bakeries in Del Mar and Vista. At the time, the chef wasn't yet ready to disclose the exact addresses, but the plans represented an ambitious leap for a business that had only recently established its first permanent storefront.
The first piece of that expansion arrived in June, when Desserts By Clément opened its second location inside Del Mar Plaza at 1555 Camino Del Mar. That ocean-view bakery debuted on June 26 in the former Paris en Rose space on the shopping center's third floor, bringing the brand into North County for the first time.
Now Vista has followed less than three months later. The company announced the third location's arrival on social media before celebrating its September 18 grand opening, and its website has already added the Vista bakery alongside Pacific Beach and Del Mar, complete with same-day pickup and delivery ordering.
Customers can expect the colorful, highly photogenic creations that have turned Desserts By Clément into one of San Diego's most recognizable modern pastry shops. Le Déoré has become particularly known for trompe-l'œil entremets designed to resemble actual pieces of fruit, with varieties including mango, raspberry, blueberry, lemon, peach and blackberry, as well as pistachio and tiramisu creations.
The Vista menu also includes the bakery's whimsical mousse desserts, macarons, cakes, croissants and other French pastries, along with a coffee and beverage program. Current ordering menus feature items including the Mango, Blueberry and Pistachio desserts, the bakery's Brown Bear creation, fruit boxes and assorted macarons.
The rapid expansion caps a remarkable rise for Le Déoré, who grew up in Brittany, France, and says he began baking at age 15 in his mother's kitchen before training under a master pastry chef. He later worked internationally, including time in Australia, Corsica and Brazil, before eventually settling in San Diego.
Before striking out on his own, Le Déoré served as executive pastry chef for San Diego-based Le Parfait Paris and built a national profile through television appearances. His résumé includes appearances on The Great American Baking Showand Food Network's Spring Baking Championship, where he was a Season 9 finalist.
His profile grew even further this year after competing on Food Network's inaugural The Ultimate Baking Championship. The increased exposure coincided with an aggressive period of growth for Desserts By Clément, which has gone from a single Pacific Beach storefront to three San Diego County bakeries in a relatively short period.
Social media has also played a major role in the bakery's rise. Le Déoré's elaborate desserts are essentially engineered for the Instagram and TikTok era: glossy mousse creations masquerading as pieces of fruit, sculptural chocolate desserts and meticulously finished pastries that can look almost too perfect to eat.
Yet the visual spectacle is rooted in traditional French pastry techniques. Le Déoré describes his approach as combining French training with influences gathered throughout his international career, emphasizing handmade desserts made from scratch with ingredients including real butter, French chocolate and fresh fruit.
The Vista opening also gives the bakery a substantially different audience from its coastal locations in Pacific Beach and Del Mar. The Main Street storefront places Desserts By Clément in the heart of downtown Vista, expanding the brand's reach into inland North County while creating a more convenient option for customers in Vista, Oceanside, San Marcos and surrounding communities.
Local anticipation had already been building before the doors opened. When signage appeared at the Vista storefront this summer, North County residents began sharing news of the impending bakery online, with several commenters specifically mentioning previous visits to the Pacific Beach shop and Le Déoré's realistic mango and blueberry desserts.
The growth may not stop with Vista. Le Déoré has previously discussed ambitions for additional bakery locations and ultimately a full-service French restaurant concept, meaning the three existing shops could represent only the beginning of a much larger Desserts By Clément footprint.
For now, the Vista opening gives the chef three distinctly different corners of San Diego County from which to build that following: the original beach community storefront in Pacific Beach, an upscale coastal location overlooking Del Mar, and now a downtown Vista bakery serving inland North County.
