Olivewood Gardens and Learning Center will host Cultivation Conversation: A Dine and Learn Series event on Saturday, March 21, from 4-7pm. This intimate outdoor dinner will include four courses prepared by the staff from Cowboy Star, as well as a guided tour and thought-provoking discussion in Olivewood's beautiful garden setting in National City. Olivewood Gardens and Learning Center provides cooking, gardening, and science education to youth, families, and adults for the purpose of teaching healthy eating and environmental responsibility. Olivewoood will open up its lovely organic garden and education center and Executive Chef Victor Jimenez and Chef de Cuisine Christopher Osborne of Cowboy Star will serve a menu that includes garden-inspired dishes that showcase healthy whole grains, produce, and proteins.

Dinner will start with an amuse of passionfruit-rosemary sorbet with pea vine emulsion, pea tendrils and blossoms, sugar snaps, rosemary blossoms and crispy farro paired with Rosemary Passionaide. The second course is an Olivewood salad with fennel fronds, mint, wood sorrel, nasturtium geranium, coriander, kumquat, green strawberry, macadamia nut, pomelo and lemongrass paired with Lemongrass Kombucha. The main course is a semolina tagliatelle with black cabbage and snowflake kale, opal basil, pine nuts, hon-shemeji mushrooms, chili flakes and optional bay scallops with warm Olivewood hen yolk paired with Olivewood Greens Elixir. The meal finishes with a Meyer lemon-lavender 'cheesecake' with green tea crumble, coconut lemongrass gel and passion fruit kisses paired with coconut juice infused with ginger and mint.  The Cowboy Star team will present each course as it comes out, explaining the inspiration behind the pairings. Red and white wine will also be offered to guests.

In addition to an other-worldy meal, Dr. Gordon Saxe M.D., Ph.D., M.P.H. of UCSD Center for Integrated Medicine will discuss the inherent connection between diet and disease treatment and prevention. Dr. Gordon is a national leader in the field of Integrative Medicine and an expert in the medical applications of plant-based diets and body-mind stress reduction techniques.
