Beaumont's Eatery Loses Executive Chef But Adds New Dinner Items.

November 17, 2014

Chef George Morris is leaving his position as executive chef of Bird Rock's Beaumont's Eatery and will move to Arizona to join former La Valencia chef Paul McCabe at Royal Palms Resort and Spa's signature restaurant, T. Cook's. With Morris' departure, Tommy Fraioli will get more responsibility at Beaumont's, including assisting in unveiling new menu items. Word on the street is that after a short test run, Fraioli will be officially promoted to the executive chef position.

"At this point in my career, I have been fortunate enough to work in NYC, Chicago, Colorado, and most recently San Diego," said Morris. "I can honestly say never have I felt so supported, embraced, or loved the way I have by the culinary community here in SD. You have made me a better chef, and that is something I will never forget. THANK YOU! With that said, I couldn't be more humbled and honored to join chef Paul McCabe and his team at T Cooks."

Tommy Fraioli remains Chef de Cuisine at Beaumont's for the time being. Fraioli is no stranger to being in charge of kitchens, as he was previously the Exec Chef at the now-closed Sea Rocket Bistro. He also won Chef of the Fest at the San Diego Bay Wine & Food Festival in 2012."

"We wish Chef George Morris the best in his future endeavors," explained Beaumont's owners Dave and Megan Heine. "We have a great Chef de Cuisine in Tommy Fraioli and look forward to his continued expertise and creativity in the Beaumont's Eatery kitchen."

The popular Bird Rock neighborhood restaurant recently rolled out a few new dinner menu items, ranging from a vegan entree to beer braised mussels and clams. New dinner entrees include the Farmer's Market Vegan Plate with toasted farro, wild mushrooms, roasted squash, smoked tomato puree, olive-almond vinaigrette; Seared Day Boat Scallop with braised shelling beans, oyster mushrooms, roasted chilies; Beer Braised Mussels & Clams with house made fish sausage, yellowtail bacon, roasted chilies; and Oysters “Bird Rockefeller” with wilted tomato, bacon, spinach, absinthe.
