Rubicon Deli's Third Location Now Open In La Jolla

The popular sandwich shop, Rubicon Deli, known for its fresh baked bread selections and top notch ingredients, has opened its third San Diego outpost in the Regents Medical Center in La Jolla, located at 4130 La Jolla Village Drive.

"We are super excited about this project!", exclaimed co-owner Antonio Carasali. "We believe the UTC/La Jolla area provides the perfect mix of execs, students, and medical pros with all the surrounding hospitals, university housing, and corporate centers."

Rubicon Deli began in Lake Tahoe, owned by co-owner Evan Corsiglia's mother, Cheri. The original deli eventually moved to Reno, NV, where Evan received an invaluable education that he would eventually build on for his own sandwich empire, as he learned to bake many styles of rolls, including garlic cheese, jalapeño jack, pesto, blue cheese and more, which Rubicon's San Diego locations continue to bake fresh every morning.
