Aqui Es Texcoco Owner Opens Chilaquiles & Torta Food Truck | Chilatruck Warms Up In Chula Vista

The owner of San Diego's most famous barbacoa spot, Aqui es Texcoco, has launched a food truck that specializes in chilaquiles and tortas! Chilatruck is now dishing out traditional Mexican urban food in South County San Diego.

Francisco “Paco” Perez has made a name for himself with his Mexican style lamb barbecue, known as Barbacoa de Borrego, which he has been serving up at his Chula Vista restaurant Aqui es Texcoco since 2008, as well as his second location in Commerce, California since 2014. Perez's barbacoa has been featured on the Travel Channel, and such shows as Bizarre Foods America, BBQ Crawl, Taco Trip, and Man Fire Food. Now, alongside co-owner Patricia Duarte, the pair are serving up one of Mexico's most popular breakfast foods, reimagined.

"My goal has always been to bring to the U.S traditional Mexican food," explained Chilatruck owner Francisco Perez. "In 2010, UNESCO declared traditional Mexican food as an 'Intangible Cultural Heritage of Humanity,' and all my dishes must comply with this honor and follow authenticity and at the same time, it must have the capacity of evolving without losing its culinary techniques and basic ingredients such as chiles, corn and beans."

Chilatruck specializes in the traditional Mexican breakfast food of chilaquiles, which, for those that don't know, are corn tortillas lightly fried and tossed with a green or red salsa and often mixed with meat and/or eggs and garnished with crema, cheese, or onion. At Chilatruck, patrons are invited to make their own variations and even make a chilaquiles sandwich.

"Chilaquiles are worldwide-known to represent one of the most traditional emblems of Mexican food," continued Perez. "During one of my trips to Mexico City, I noticed an interesting phenomenon - Tortas de Chilaquiles sold on corner food stands. These places were filled with people of all socio-economic backgrounds. By observing these people patiently waiting to place their order, I understood why Chilaquiles were served in a torta sandwich form - It’s a fast and practical way to transport Chilaquiles and a delicious way to do it, too. People don’t need utensils or a table with chair when they need to take their food to the office, home, or wherever their place of work is. Tortas de Chilaquiles unite people no matter their background."
