Former Pop-Up Rooster Ramen Secures Location In Downtown Encinitas

Rooster Ramen, which previously operated through pop-ups at Bull Taco locations in Encinitas and Cardiff, has found a permanent home in downtown Encinitas and is anticipated to open by this summer.

Founded by California Culinary Academy graduate David Volk, who helped open Bull Taco, Rooster Ramen will offer at least nine different types of ramen, including vegan and vegetarian options, as well as the ability to create your own bowl. There will also be a menu of Japanese izakaya-style small plates and yakitori grilled skewers over real binchotan charcoal. A daily revolving specials board will offer seasonal items including Osetra caviar, monk fish liver, and pork cheeks. Volk intends to implements a digital ticket vending ordering machines like they use at many traditional Japanese ramen. The eatery will also offer a menu of beer and sake. 

The yet-to-be disclosed location will be located somewhere in downtown Encinitas off the 101 near the Leucadia border and have a "Japanese Farmhouse ambiance" with a semi-open kitchen, large ramen bar and plenty of outdoor seating.
