"Ramen always held a special place in my heart," explained Borillo. "My first job was at a popular ramen restaurant Yoshu-Shonin in Yokohama when I was 18 years old. Hachi Ramen's executive chef Misako Ohba has created amazing flavors using complex Japanese technique with local and seasonal ingredients. Our menu will be updated every season and our beverage program focuses on local breweries and Baja wines as well as craft cocktails made with cold pressed juice."
The ramen-centric eatery offers a unique variety of Japanese noodle soups, including a traditional Tonkotsu pork ramen, a Yasai vegan ramen, a duck ramen with foie gras oil, and a TanTan ramen with sansho peppered chicken. Hachi Ramen will also serve a menu of small plates including many favorites from Artisan Bento like seafood crudo, rice bowls, steamed bao buns, sushi rolls, poke, and Japanese-inspired charcuterie boards, as well as craft beer, wine, shochu and sake.
