Wrench & Rodent Owners Launch Crowd Funding Campaign To Raise Funds For Opening Of Plant-Based The Plot

August 22, 2019

The husband-and-wife team behind North County San Diego's uber-popular rockstar sushi destination Wrench & Rodent Seabasstropub has launched an Indiegogo crowd funding campaign to raise capital for the opening of The Plot - a 100% plant-based, no-waste restaurant and catering service opening in the 4,000 square-foot South Oceanside space that currently houses Hon Sushi.

From Davin & Jessica Waite, the married couple behind Oceanside's dual concepts Wrench & Rodent Seabasstropub and The Whet Noodle, The Plot will be a “proudly plant-based” and “zero-waste-ethos” all-day restaurant that will operate as a coffee house, juice bar and cafe during the day with an eclectic and ever-changing, seasonal vegan menu during the evening hours. Jessica, who has been on a vegan diet for most of her adult life, has earned a reputation for her inventive vegan omakase offerings at Wrench and will implement those skills in full effect at The Plot.

In the works since late 2017, The Plot will serve "boundary-pushing food that is completely plant-based." Expect an all-vegan menu of dishes spanning from soups and salads, to pickled items and burritos, to an array of imaginative vegan sushi options like banana peel nigiri and tomato sashimi. All parts of the plants will be utilized and there will be no vegan faux proteins used in any dish. The restaurant will maintain a vegan-only kitchen, with all produce secured from area farms, as well as San Diego's Specialty Produce. The Plot will sit less than a block from Wrench & Rodent and will have 150 seats plus a commissary kitchen to supply future locations, grab-and-go sales and retail food operations.

"We were hesitant about crowd-raising capital at first, but then we realized how cool the concept really is," explained Jessica Waite on the Indiegogo campaign. "Crowd-raising levels the playing field for small businesses, and allows a community to come together to create positive change. In total we aim to raise $750,000 to pay for construction costs. This will cover a whole range of building expenses, materials, large kitchen equipment, and finishes. By contributing to this campaign you will very literally be building a Plot, from floor to ceiling!"

Backers of the Indiegogo campaign will have the opportunity to select from apparel, gift cards, special catered events, or the option of pledging healthy, plant based meals to a San Diego non-profit. Also, anyone who contributes $100 or more will have their name put on a dedicated wall at the restaurant.

The Plot is currently offering its 100% vegan catering service throughout San Diego and hopes to open its full service restaurant at 1733 South Coast Highway in Oceanside by late 2019/early 2020. For more information, visit ThePlotRestaurant.com.
