San Diego's Newest Rooftop Bar & Restaurant Birdseye Opens On The Coast Of La Jolla Cove

The former La Jolla Village Inn has reopened as the Cormorant, a boutique hotel featuring San Diego's newest rooftop bar and lounge Birdseye.

Cormorant Boutique Hotel is a 26-room modern hotel now open in San Diego's seaside town of La Jolla. Named after the town’s famed Cormorant birds and inspired by the beauty of the coastal community, the contemporary hotel features nautical-inspired guest rooms with private balconies, views of the Pacific Ocean, and La Jolla’s newest bar and lounge, Birdseye, located on the property's rooftop terrace.

Located on fourth-floor rooftop, Birdseye brings a fresh and hip ambiance complete with geometric designs, pop art, a living plant wall, and a panoramic "birds eye view" of La Jolla cove. Birdseye offers craft cocktails and a menu of small bites from Chef Luciano Scagliarini, a Le Cordon Bleu graduate that previously worked at Edgewater Grill and Harbor House in San Diego's Seaport Village, as well as a long stint as the Executive Chef of the Coronado Cays Yacht Club. 

Signature menu items at Birdseye include Beef and Corn Empanadas served with chimichurri sauce (chef’s family recipe), tempura-battered Shrimp Tacos, Carnitas Eggs Benedict topped with avocado hollandaise, and a Diving Bird cocktail made with coconut cream, pandan, rum and tropical fruit juices. Bringing a fresh and hip ambiance, Birdseye is accessed through an outdoor alleyway decorated with a pop-art mural and living plant wall, inviting guests to ascend above the bluffs and sip a cocktail while watching the sun set over the ocean.

In addition, the property will also house Prospect Market, an upscale grab-and-go marketplace featuring a collection of premium, thoughtfully curated goods including fresh juices, snacks and beverages, and florals. Prospect Market will also offer a private balcony for guests to enjoy a charcuterie board or glass of wine.

The Cormorant Hotel is the product of Oceanic Enterprises, a company that has over five other hotels, restaurants, and bars in the San Diego area. Manoj Chawla, Managing Partner at Oceanic Enterprises has a long history working with hospitality projects. In 2016, the company acquired the hotel and began an extensive renovation and rebranding to transform it into Cormorant Boutique Hotel. Oceanic Enterprises was founded in 2011 and has over 14 other properties around the country. Chawla has been on a buying spree around San Diego during the pandemic. In the couple years, he has acquired Martini's Above Fourth in Hillcrest, Mikami Bar & Revolving Sushi in Clairemont, Banzai Bar in Midway District, and Star Bar in downtown San Diego.
