Highly Anticipated Paradisaea Bar & Restaurant Ready To Bring Chef-Driven California Cuisine To San Diego's Bird Rock

New husband-and-wife restaurateurs have put together a culinary power team to launch Paradisaea, a modern California bar & restaurant opening later this month in the iconic "Piano Building" in San Diego's Bird Rock.

In late 2018, husband-and-wife Eric & Zoe Kleinbub bought the iconic "Piano Building" in the heart of San Diego's Bird Rock neighborhood for nearly $3 million with plans to open a neighborhood restaurant. The Kleinbub's have since hired former Eleven Madison Park executive pastry chef Mark Welker to lead the kitchen at their new dining establishment, dubbed Paradisaea, which is named after a species of birds-of-paradise. Former NoMad Hotels alumni Christopher Lowder and Jeffrey Tascarella will also oversee bar & restaurant management, and longtime Kindred bartender Dannika Underhill will work as the restaurant's beverage director.

Set to unveil on Sunday, September 25, Paradisaea is a 4,500 square-foot bar & restaurant offering a menu of modern California fare ranging from pastas and burgers to local seafood, meat-driven entrees and vegetarian and vegan dishes. Expect dishes like the mushroom raviolo with ricotta, egg yolk and sherry sabayon; a beef tartare with crispy sunchokes, garlic togarashi, shiso, and ponzu; and the Wagyu nachos piled high with marinated zabuton wagyu asada, lime scented-tortilla chips, guacamole mousse, creme fraiche, pickled red onions, crispy cheese, chives, sliced avocados, black olives, jalapeños, tomatoes, cilantro, and cheddar-jack fondue. There will also be a full bar with tropical-inspired cocktails, local beer and a curated wine list. 

Next door to Paradisaea, the Kleinbubs will also soon launch a new cafe component dubbed Dodo Bird Donuts. Set to unveil later this fall, Dodo Bird will serve a menu of Dark Horse Coffee drinks, breakfast dishes, and pastries, as well as a retail component with a curated collections of home goods and clothing items.
