Founded in San Diego's University Heights in 2016 by co-owners Steven Torres and Executive Chef Gan Suebsarakham, Pop Pie Co. quickly became a popular dining destination due to its ever-changing assortment of globally-inspired savory and sweet single-serving pies made with a signature all-butter crust. After getting Pop Pie established, Torres and Suebsarakham opened small-batch ice cream parlor Stella Jean's Ice Cream in the space directly next door to their pot-pie eatery in University Heights.
In 2019, the second Pop Pie Co./Stella Jeans opened in Costa Mesa in Orange County, CA. Last year, Pop Pie Co. and Stella Jean's Ice Cream launched a new outpost next to Cesarina on Voltaire Street on the outskirts of Point Loma and Ocean Beach. The fourth area locations of Pop Pie Co. and Stella Jean's Ice Cream will open in San Diego's South Park neighborhood, currently being constructed in a 1,600 square-foot space that last housed part of South Park Brewing.
Earlier this week, Pop Pie Co.'s original location was broken into and burglarized. Four people dressed in hoodies illegally entered into the restaurant on February 16 at 2:52 am and proceeded to vandalize and steal from the property.

Like other branches, expect a menu featuring a selection of savory pies five inches in diameter and sweet pies served as hand pies, by the slice, and as full 9" pies, as well as a menu of house made ice cream, coffee and other refreshments.

Highlights from the menu include the classic chicken pie with chicken breast, garden vegetables, pearl onions, and creamy herb sauce; The Boss breakfast pie with Applewood smoked bacon, two cracked eggs, cheddar & Jack cheese, topped with spiced hash browns and served with a side of maple sauce; the sausage roll with minced pork, bacon, celery, onion, carlic all inside an all butter laminated pastry covered in sesame seeds; and the blueberrry apple yuzu crumble pie with candied lemon and old fashioned oat crumble.

The group plans to continue expanding around San Diego and Southern California, including eventually launching a location in North Park and opening a Stella Jean's ice cream parlor within the new Roosevelt Cottages in Carlsbad, which is expected to unveil around Memorial Day weekend. There is also a branch of Stella Jean's Ice Cream coming to Kensington next month, as the brand is moving into the space that last housed Moosie's.
