Cowboy Cantina Brings Southwestern Sizzle To San Diego’s Gaslamp

A new dining and drinking destination is riding into San Diego’s Gaslamp Quarter, as Cowboy Cantina, a lively restaurant and bar inspired by the bold flavors of the American Southwest, officially soft opens this weekend.

The San Diego outpost marks the second location for Cowboy Cantina, which debuted earlier this year in the Rancho Mirage area of Palm Springs. Founded by restaurateur Jim Valdez, the concept draws on the rustic culinary traditions of colonial Spanish settlers, American cowboys, Native American influences, and Mexican cuisine, with a distinct focus on New Mexico's famed Hatch chiles.

The Gaslamp location is expected to offer a full slate of service - weekend brunch, lunch, dinner, happy hour, and a robust bar program - set against a backdrop of festive Western flair and a lively, boots-optional party atmosphere. Like its Coachella Valley predecessor, the San Diego venue will showcase a menu developed with the help of legendary Santa Fe chef Johnny Vee, who helped shape Cowboy’s signature dishes and flavors.

Diners can expect a wide range of Santa Fe-style specialties, including fajitas al fuego, green chile-smothered tostadas, brisket fries, and the crowd-favorite Chicken Fried Pork Chop. Burgers and BBQ play a big role on the menu as well, with options like the Bronco Burger stacked high with brisket and onion rings, and Big Daddy’s BBQ Platter featuring smoked ribs, pork, and brisket with classic sides.

The cocktail program leans spicy and Southwestern, with colorful offerings like the Skinny Cowgirl (featuring pea blossom-infused tequila and black lava salt), the spicy Chili Nelson bourbon cocktail, and a margarita flight for those who can’t pick just one. Beer lovers will find both local brews and Cowboy-branded lagers and IPAs on tap.

While the soft opening takes place over the weekend, a formal grand opening is expected in the weeks to follow. With its eclectic menu, party-ready atmosphere, and central Gaslamp location, Cowboy Cantina is positioning itself as San Diego’s newest hangout for casual dining, cocktails, and Southwestern comfort food with a twist.
