Founded in 2018 as a pop-up inside a Koreatown restaurant in Los Angeles, Egg Tuck quickly built a cult following for its Instagrammable breakfast creations. Similar to Japanese-style "tamago sando" egg sandwiches, Egg Tuck's signature "tucked" sandwiches are crafted with pan-toasted thick brioche bread, soft scrambled cage-free eggs, and house-made sauces like sriracha aioli and herbaceous egg mayo. Premium fillings like bacon, avocado, ham, and Korean-style short rib patties (tteok-galbi) help round out offerings like the fan-favorite Royal West and Spicy Royal West, which have become icons in cities from L.A. to Chicago.
Now owned by Anaheim-based Waba Grill, Egg Tuck is undergoing rapid expansion across California, with the Little Italy shop marking a key step in its Southern California strategy. The fast-casual chain will occupy the street-level corner unit of The Lindley apartment complex, next door to Solidcore Pilates on the corner of Ash and Columbia.
The Little Italy storefront puts Egg Tuck in direct proximity to thousands of residents and office workers, not to mention San Diego’s booming brunch crowd. The location will offer counter-service and takeout, and while hours have yet to be announced, other locations operate from 7:30 a.m. to 4 p.m., making Egg Tuck a prime stop for breakfast, lunch, or an early dinner.
Beyond egg sandwiches, the menu includes breakfast burritos, crispy tater tots topped with eggs, and vegan and vegetarian options like the Just Burrito made with plant-based Just Egg. Drinks include Groundwork Organic Coffee, a signature chai churro latte, and kid-friendly options like real chocolate milk.
Egg Tuck is anticipated to open in late summer at 1331 Columbia Street in San Diego's Little Italy. For more information, visit eggtuck.com.
