Una Más Baja Fusion Bar & Kitchen Unveils In San Diego's North Park

Una Más on Adams, the long-anticipated Baja-San Diego fusion restaurant and bar, has quietly soft opened with limited hours and a scaled-down menu, marking the beginning of what many hope will become a vibrant new fixture in San Diego's University Heights/North Park dining corridor.

First announced in early 2024, Una Más has undergone over a year of development, transforming the former site of a planned German beer garden into a lively, al fresco destination inspired by the cultural and culinary crossroads between San Diego and Baja California. The project is a collaboration between local real estate developer Michael Donovan of SDPB Holdings and Baja-based restaurateur and brewery founder Collin Corrigan. The design and concept, helmed by Gaby Sánchez Corrigan, centers on open-air dining, fire pits, and communal gathering spaces meant to reflect both the relaxed beach culture of Baja and the vibrant energy of San Diego neighborhoods.

The restaurant's culinary direction is led by Chef Daniel Romero Topete, a rising star in San Diego’s food scene. Along with his brother and fellow chef, Dante Romero, Daniel recently took over operations at The Lion’s Share, the storied downtown cocktail bar and game-forward restaurant known for its eclectic decor and adventurous menu. The Romeros' involvement signals a strong focus on quality, seasonal ingredients, and cross-cultural creativity.

At Una Más, the menu - currently in soft-launch form - is expected to showcase a fusion of Mexican favorites and San Diego influences, with a focus on fresh, approachable plates ideal for sharing. Once fully launched, diners can expect dishes that mirror the Corrigans' passion for border-region cuisine and hospitality, with Baja seafood, grilled meats, and inventive plant-based offerings among the highlights.
The beverage program at Una Más features a rotating list of 20 taps pouring craft beer from both sides of the border. Local favorites like Ballast Point, Pizza Port, and Karl Strauss are joined by standout breweries from Ensenada, Mexicali, and Tijuana. Wines and cocktails with regional flair are also expected to complement the food and the laid-back atmosphere.

The 3,500-square-foot venue includes 1,000 square feet of indoor space and a sprawling 2,500-square-foot outdoor area designed for relaxed, family-friendly dining. A food trailer stationed on the patio adds a casual, festival-style touch to the experience, and programming is expected to include live music, events, and weekend brunch service in the future.

Una Más marks a notable shift from Donovan's original vision of a German-style biergarten for the location. That concept, announced in 2024, was shelved in favor of a more authentic and personal approach that draws on Corrigan's two decades of experience in Baja California and his previous venture, El Cruce + 241 in Chula Vista.

The team behind Una Más has yet to announce an official grand opening date, but the soft launch signals that the project is finally coming to life. For now, early guests can enjoy a taste of what’s to come - and watch as a new culinary chapter unfolds on Adams Avenue.
