Originally founded as Shootz Fish X Beer, the venture began as a collaboration between Wrench & Rodent owner and chef Davin Waite, builder-designer Chris Slowey of CLTVT, and professional surfer Cheyne Magnusson. Shoots transformed a small kitchen window within Bottlecraft's tasting room into a culinary destination for sustainable seafood dishes paired with coastal-ready craft beer. Their poke bowls, seafood tacos, and creative twists like ahi tuna corn dogs quickly built a loyal following and helped cement their place in Oceanside's evolving dining scene.
The concept expanded rapidly. Within a year, Shoots opened a location in Carlsbad’s The Cottages, which soon became its flagship. Meanwhile, the original home in Oceanside continued to thrive under a shared model with Bottlecraft. With Bottlecraft founder Brian Jensen focusing on new ventures, including the recently opened Bock German gastropub in South Park, Shoots was given the opportunity to assume full control of the Oceanside location. That transition becomes official this week, when the alcohol license transfers and Shoots takes over both operations and branding.
This milestone reflects not just growth but resilience. The Waite family has repeatedly demonstrated an ability to create, adapt, and rebuild. Their Oceanside Pier project, Brine Box, opened in 2023 with a throwback menu of fish and chips and a commitment to zero-waste practices. Less than a year later, it was destroyed in a fire that consumed much of the pier. Around the same time, The Plot Express, a plant-based café in Carlsbad's The Cottages, was closed its doors. Despite these setbacks, Shoots endured, maintaining its momentum and reputation for bold, sustainable concepts.
With the transition complete, Shoots is returning to the space that launched the brand, completing a full-circle moment in its story. The Oceanside location will remain familiar to regulars, but now with the freedom for Shoots to expand programming and deepen its role as a cultural hub for food, surf, skate, and art.
