Katsuya Ko Finally Sets Opening Timeline At San Diego's Westfield UTC After Final Inspection Delays

After being forced to temporarily pause its debut due to final city inspections, Katsuya Ko is officially ready to welcome diners to its long-awaited San Diego location at Westfield UTC starting in early February.

Following nearly two years of anticipation, construction delays, and shifting timelines, Katsuya Ko held its soft opening event at Westfield UTC in early January but was unable to fully open due to final permitting. The next-generation Japanese dining concept will host a media and VIP preview on February 4, followed by a soft opening on February 5 that will be open to the general public. Reservations are scheduled to go live on February 6, marking the restaurant’s full operational rollout after nearly two years of anticipation and construction-related delays.

Katsuya Ko is a more casual offshoot of the globally recognized Katsuya brand, developed by hospitality group SBE in collaboration with celebrated chef Katsuya Uechi. The “Ko” concept, which translates to “child” in Japanese, is designed as a next-generation evolution of Katsuya. Think a lighter, more relaxed, and intentionally approachable version of the Japanese brand while preserving the culinary identity that made the original restaurants internationally known.

Located inside the increasingly competitive dining hub that is Westfield UTC, Katsuya Ko joins a lineup of high-profile Asian and Asian-inspired restaurants that have transformed the La Jolla mall into one of San Diego’s most destination-driven food centers. Its arrival further underscores how UTC has shifted expectations around mall dining, drawing both locals and visitors seeking chef-driven concepts rather than traditional food court fare.

While the atmosphere leans casual and family-friendly, the menu remains firmly rooted in Japanese technique and flavor. Diners can expect sushi, sashimi, hand rolls, and familiar Katsuya staples alongside comfort-forward small plates, yakitori, gyoza, and Ko-exclusive offerings designed for everyday dining rather than special-occasion nightlife. The format is intended to appeal equally to families, students, professionals, and longtime fans of the Katsuya brand.

The opening also marks a return of the Katsuya name to San Diego. The group previously operated Katsuya by Starck at the Andaz Hotel downtown from 2012 to 2014, before that space later became STK Steakhouse. Katsuya Ko represents a fresh reintroduction to the region, with a concept more closely aligned to San Diego’s lifestyle-driven dining culture.

Designed as an all-ages destination, Katsuya Ko emphasizes warmth, comfort, and accessibility over late-night energy, positioning it as a go-to option for lunch, dinner, and early evening meals within UTC’s bustling retail and entertainment environment.

Katsuya Ko is located at 4303 La Jolla Village Drive, Suite 2105, inside Westfield UTC in San Diego’s University City neighborhood. For more information, visit sbe.com/restaurants/katsuyako/lajolla
