Mondays Bar & Grill Taking Over Former Bottle Rocket Space In San Diego's East Village

San Diego’s East Village nightlife corridor is preparing for another reset as Monday’s Bar & Restaurant gets ready to take over the long-running corner space previously home to Bottle Rocket Bar & Grill.

Public records confirm that a new liquor license application has been filed for the address under the ownership of Cody Cox, Shaun Oertwig, and Phil Panek. The filing signals plans for a full-service alcohol program, positioning Monday’s as a bar-forward concept in one of downtown’s most high-visibility locations. Social media posts from the team suggest construction is nearing completion, with inspections likely underway and a Spring 2026 debut anticipated.

The transition comes just months after Bottle Rocket announced it would permanently close in late October 2025. Co-owner Elias Delgado cited lease complications and mounting operational challenges in a farewell message, marking the end of a six-year run that began in 2019 when Bottle Rocket replaced Monkey Paw Pub & Brewery.

The 16th Street address has experienced more turnover than most downtown bar spaces over the past decade. Monkey Paw, originally launched by Scot Blair and later acquired by Coronado Brewing Company, shuttered in 2018 after years as a craft beer destination. Bottle Rocket followed with a tavern-style refresh that leaned into smash burgers, hot chicken sandwiches, 30 rotating taps, and a casual game-room vibe. Despite early traction, the business ultimately succumbed to the same pressures facing many independent downtown operators: rising costs, shifting consumer habits, and uneven foot traffic tied to East Village’s evolving development landscape.

Monday’s appears poised to take a different approach. Branding on social media describes the concept as an “East Village neighborhood dive,” suggesting a stripped-down, bar-centric atmosphere rather than a heavy food-and-craft-beer focus. While full menu details have not yet been released, the liquor license filing indicates an on-sale general eating place permit, meaning food service will accompany the beverage program.

The corner location offers built-in advantages. Situated just off the Interstate 5 corridor and steps from Market Street, the property sits near established nightlife anchors including Punch Bowl Social and several other late-night venues. High freeway visibility and pedestrian exposure have long made the space attractive to operators — even if sustainability has proven elusive.

For East Village, the arrival of Monday’s represents both continuity and reinvention. The address has repeatedly drawn ambitious bar concepts, yet few have achieved lasting stability. Whether Monday’s can carve out a durable niche as a true neighborhood watering hole, rather than another short-lived chapter in the space’s revolving history, will depend on execution, pricing, and the team’s ability to adapt to a downtown market that remains in flux.

An official opening date has not yet been announced, but with buildout reportedly in its final stages, Monday’s Bar & Restaurant is expected to open its doors at 805 16th Street in the coming weeks.
