Sustainable and Innovative New Restaurant - Boxd - to Open in Carlsbad

A new restaurant in Carlsbad is taking the word "open" very literally.  Boxd Hand Crafted Waffle Foods is certainly the first restaurant of its kind in the nation, and it's not because of the waffle sandwiches.

On the corner of Carlsbad Village Drive and State Street, soon you'll find a recycled shipping container that opens up using hydraulics that sustainably run on vegetable oil. When the restaurant opens there will be a seating area in the "box" as well as a large grass area for chilling out during the scheduled movie nights and other events.

"Everyone said we need something different in Carlsbad," said owner and Carlsbad resident James Markham, who also opened Knockout Pizzeria and Knockout Burgers, and at one point worked at my favorite pizzeria in San Diego, Bronx Pizza. "We'll be serving gourmet waffle sandwiches for breakfast, lunch and dessert. We'll also serve beer and wine and show movies on the outdoor lot."

Boxd plans to open at some point in May 2012 and anticipates potentially starting three more locations by the end of the year.  The container concept was designed and built by Gryphen Services, Inc., a full service general engineering and contracting company based in Paramount, CA
