Owners Of Trust To Open Hundred Proof On June 27 In San Diego's Hillcrest Neighborhood

The team behind Hillcrest's popular dining destination Trust, including Executive Chef Brad Wise and Managing Partner Steve Schwob, will debut their next venture right up Park Boulevard in the space that previously housed S&M Sausage and Meat. Hundred Proof opens on Tuesday, June 27, featuring a menu of redefined bar food complimented by hand-crafted cocktails, boozy milkshakes, alcohol-laced slushies, and a devotion to the lost art of boilermakers.

Trust has been making a name for itself as one of the top restaurants in town since opening in February 2016. When nearby S&M Sausage and Meat closed late last year, Trust's Executive Chef Brad Wise and Managing Partner Steven Schwob decided to double down in there remote area on the Hillcrest & University Heights border, taking over the 3,200 square-foot space to open Hundred Proof.

While the initial plan was to do a slight interior remodel of the space, JEL Designs ended up doing a complete overhaul, opening up the previous bi-level interior and transforming it into a modern version of an old Western saloon. Standout design features include plush blue leather booths, a reclaimed wood & white marble bar, and a Jackalope lined custom graphic wall. There is also an outdoor patio facing Park Boulevard.

"Every great neighborhood deserves a great gathering spot, a bar that’s all its own," said partner Steve Schwob. "We envisioned Hundred Proof to feel like a familiar favorite but with a menu and atmosphere that stands out."

For Hundred Proof, Executive Chef Brad Wise designed an approachable bar food menu of shareable plates. Expect dishes like braised beef nachos, truffle mushroom mac n' cheese, baked crab dip, Hawaiian style ahi poke, short rib bao buns, crispy chicken oysters, jerk shrimp screwers, a burger, a fried chicken sandwich, and a handful of pizzas. Pastry Chef Jeremy Harville has also come up with a variety of fun selections including a giant $20 banana split, a boozy root beer float and a coffee & donuts milkshake.

"This is the kind of uncomplicated bar food we all like to eat on our days off," said Chef Wise, a New Jersey native who has been working in restaurant kitchens since the age of 12. "The difference is in the execution. Everything on the menu is made in house and the interpretation is a little unexpected. Our goal is to serve bar food made better."

As far as drinks, Bar Manager Juan Sanchez has come up with a menu of 8 unique craft cocktails, which includes a Moscow mule slushie (a Frosé version is in the works). The unpretentious bottle service offered at Hundred Proof pairs items like a 6-pack of Miller High Life with a bottle of Makers Mark. The unique boilermaker list offers shot & beer combinations like Taylor Made - Buffalo Trace whiskey shot paired with a pint of Modern Times Orderville. There is also a curated selection of craft beers and wines by the glass and signature milkshakes like a horchata version.

Hundred Proof debuts at 4130 Park Boulevard on June 27 and will initially open at 3pm until opening up for lunch later this summer when it will operate Monday through Thursday from 11am-11pm, Friday & Saturday from 11am-1am, and Sunday from 9am-11pm.
