After debuting the flagship location within Liberty Station this past July, Sami Ladeki of Sammy's Woodfired Pizza and famed Peruvian Chef Emmanual Piqueras will open a second outpost of Pisco Rotisserie & Cevicheria in San Diego's North County by year's end.
The 4,500 square-foot Sammy's Wood Fired Pizza location in Carlsbad, which has been in operation for 20 years, will soon become the second branch of Pisco Rotisserie & Cevicheria. A partnership between Chef Piqueras, a culinary ambassador to Peru, and Sammy's owner Sami Ladeki, Pisco Rotisserie will present a food menu centered around modern Peruvian cuisine, including pollo a la brasa rotisserie chicken and many types of Peruvian-style ceviche, as well as a dedicated wok station that will prepare some of the Chinese-influenced dishes of Peru.
"We want Pisco to be a local staple where our guests can experience something different, have the opportunity to embrace other cultures, and really go on a culinary journey with us," said Pisco owner Sami Ladecki.
Dishes will use as many local and organic ingredients as possible, as well as concentrate on sourcing only fresh, sustainable seafood from area purveyors. There will also be a focus on vegan and vegetarian options. Behind the bar, Pisco will pour South American wines, local beers, and mix up an extensive Pisco cocktail menu using the restaurant's namesake Peruvian brandy.
