Le Parfait Paris Team To Bring Belgian Beer & Waffles To North Park

The crew behind San Diego's hit pâtisserie Le Parfait Paris has taken over the space previously occupied by a Starbucks in the heart of North Park to open Belgian Beer & Waffles, a fast-casual waffle concept set to open later this year with a menu based around savory & sweet Belgian street food.

Husband-and-wife French natives Guillaume & Ludivine Ryon first launched Le Parfait Paris as a farmers market vendor in 2013 before opening their full-service downtown cafe in 2014. The husband and wife duo have also launched a micro-location within Liberty Public Market and opened Terrace Tap outdoor kiosk bar within the food court at Fashion Valley Mall.

Belgian Beer & Waffles (BBW) will be a new concept opened in partnership with Mathias Lagger, a longtime manager at Le Parfait Paris and alumni of Vatel International Hospitality Management School. Heading into the space that last housed a Starbucks adjacent to West Coast Tavern and The Observatory, the eatery will offer a Belgian countryside-inspired design with 1,700 square feet of interior dining space and an outdoor patio on University Avenue overlooking the North Park sign. The restaurant will offer a menu of fresh-baked beer-batter waffle sandwiches, waffle ice cream concoctions, Belgian fries and more, as well as a list of Belgian beers and wines.

Belgian Beer & Waffles is expected to open as early as late spring/early summer at 2899 University Avenue in Sann Diego's North Park.
