Plant-Based, Zero Waste The Plot To Open Next Week In San Diego's North County

Nearly 3 years in the making, the husband-and-wife powerhouse behind Oceanside's rockstar sushi destination Wrench & Rodent Seabasstropub is nearly ready to unveil The Plot - a 4,400 square-foot, wholly plant-based, no-waste restaurant and catering service opening next week in South Oceanside.

From Davin & Jessica Waite, the married couple behind Oceanside's dual concepts Wrench & Rodent Seabasstropub and The Whet Noodle, The Plot is a “proudly plant-based” and “zero-waste-ethos” all-day restaurant that will offer a coffee house component with a juice bar and cafe during the day with an eclectic and ever-changing, full-service seasonal vegan menu during the evening hours. Jessica, who has been on a fully vegan diet for most of her adult life, has earned a reputation for her inventive plant-based omakase offerings at Wrench and will implement those skills in full effect at The Plot.


In addition to an array of imaginative vegan sushi options like banana peel nigiri and tomato sashimi, The Plot will serve a full menu of dishes spanning from soups and salads, to pickled items and burritos. All parts of the plants will be utilized and there will be no vegan faux proteins used in any dish, although they will make plant versions of traditional meat products like imitation crab made from mushrooms and a beet Reuben. The restaurant will maintain a vegan-only kitchen, with all produce secured from area farms, as well as San Diego's Specialty Produce.
