Swagyu Chop Shop To Bring Wagyu Beef To San Diego's North County

The next branch of Wagyu beef butcher shop and chef-driven burger restaurant Swagyu is opening in San Diego's North County city of Oceanside. 

Chef Steve Brown opened his first Swagyu Chop Shop in summer 2020 at 1002 Palm Avenue in Imperial Beach, with a second location launched in Poway soon after. Late last year, Brown took over the 19-year-old Isabel's Cantina in Pacific Beach for a pop-up location of his butcher shop. He has since permanently secured the restaurant space and opened the flagship branch of his Swagyu Burger & Chop Shop, which offers a full dinner and Sunday brunch menus, as well as a secret restaurant in the kitchen seating 20 guests for his 12 course progression of wagyu tasting menu. Another branch of Swagyu was in the works for the space previously occupied by Schooner Station Pizzeria & Sports Pub in Encinitas, but there is no word on whether that branch is still happening. 

The next outpost of Swagyu Chop Shop will open as part of the currently under construction Freeman Collective in South Oceanside, which is made up of two buildings that will house a tasting room from San Clemente-based Artifex Brewing, an outpost of Blackmarket Bakery, a second location of Leucadia's Corner Pizza, a third branch of Northside Shack, and San Diego's first location of Texas-inspired breakfast taco chain HomeState. Like the Pacific Beach branch, the new Swagyu will include an onsite burger restaurant and steakhouse, as well as a butchery selling prime cuts of A5 Wagyu. The restaurant will offer a menu of smashed burgers, katsu sandwiches, and cooked steaks customers can choose directly from the meat counter. Chef Brown will also serve his special Cosecha multi-course, steak-centric meals. Swagyu Chop Shop will also have a full bar with cocktails, beer, wine and specialty sake to compliment it's food offerings.

The newest Swagyu Burger & Chop Shop is anticipated to unveil by year's end at 510 Vista Way in San Diego's North County city of Oceanside. For more information, visit swagyu.square.site.
