San Diego's Grind & Prosper Hospitality (Miss B's Coconut Club, Louisiana Purchase) has unveiled Coco Maya, a Caribbean-inspired restaurant and rooftop lounge now open in Little Italy.
Local restaurateur Peter Cich, who also has ownership interests in The Duck Dive, PB Shore Club, PB Fish Shop and is the founder of Grind & Prosper Hospitality, launched island inspired Miss B’s Coconut Club in early 2016 on the corner of Santa Clara Court and Mission Boulevard in Mission Beach. Grind & Prosper also opened 8,000 square-foot dining, drinking & entertainment destination Park 101 in downtown Carlsbad in summer 2017 and Cajun-style Louisiana Purchase bar & restaurant in North Park in 2019. The company is also in the process of launching a pair of concepts within the Brick boutique hotel in San Diego's North County city of Oceanside.
Coco Maya soft opened over the weekend in the heart of San Diego's Little Italy in the completely updated unit that last housed PrepKitchen, which suddenly shuttered all 4 San Diego branches in March 2020 after 8 years in business. Designed by GTC Design Studio, the second story restaurant now has a design influenced by Tulum, Mexico with an open-air ambiance and central bar sitting beneath a 30' skylight. There is also a new 900 square-foot rooftop deck and an eclectic food menu from former World Food Champion & Coco Maya Executive Chef Ricardo Heredia. Expect Latin-fusion dishes inspired by Mexico's Yucatan side of the Caribbean coast, with many items cooked on a coal-fire Josper oven. There is also a full bar menu centered around rum cocktails, as well as craft beers on draft and a curated wine list.
