Kaiseki Sushi To Bring Intimate Japanese Dining Experience To San Diego's North County

From Wild Thyme Group (Shorebird Restaurant), Kaiseki Sushi will bring an intimate Japanese dining experience to San Diego's North County, replacing the short-lived Jay Bird's Hot Chicken. 

An emerging concept from the Wild Thyme Restaurant Group, a Long Beach company that is also bringing a location of its Shorebird restaurant to San Diego's Seaport Village, Kaiseki Sushi is replacing Wild Thyme's Jay Bird's Hot Chicken within The Forum mall in Carlsbad. Kaiseki Sushi is a new restaurant brand from Wild Thyme, although the company operates a similar but more ambitious eatery named Kai Modern Japanese Bistro, which was launched in Huntington Beach earlier this fall. 

Named after the term for a multi-course Japanese dinner, Kaiseki is expected to offer an intimate, affordable, omakase-centered menu of modern Japanese cuisine from Wild Thyme's culinary director Jay Bogsinske and executive chef Tin Nguyen. Expect a flat-fee price point with various course options in addition to an a la carte menu of sushi rolls, hand rolls, nigiri, sashimi and other authentic Japanese dishes. The eatery will also offer a variety of beer, wine and sake. 

"Kaiseki focuses on a fresh variety of local and Japanese fish," explained Wild Thyme Group founder Heinrich Stasiuk. "We will offer an affordable Omakase menu that ranges in price from $22-$65 per Omakase. The idea is for guests to try a variety of items. We will also have our traditional sushi menu and also proud of our hand rolls which are prepared with the best nori seaweed there is out there."
