Arizona-based J.T. Prime Kitchen & Cocktails is opening a location in the space that long housed Primavera Ristorante in the heart of San Diego's island city of Coronado.
This spring, Trujillo will open his first California location J.T. Prime Kitchen and Cocktails in the 3,283 square-foot, bi-level building on Orange Avenue in Coronado that previously housed Primavera Ristorante for more than 30 years. Expect a globally-influenced menu with signature dishes like succulent roast pork belly with a Chile de árbol blackberry sauce; homemade short-rib ravioli in a rich gorgonzola cream; and an Australian Wagyu filet with charred vegetables and Yukon gold mashed potatoes. The restaurant will also have a full bar with spirits, cocktails, beer and wine.
Chef Alex Trujillo founded J.T. Bros Handcrafted Sandwiches in Yuma, AZ, in 2018. In 2020, he began hosting dinner pop-up dinners from his sandwich shop under the name J.T. Prime and in 2022 opened the first J.T. Prime Kitchen in Scottsdale, AZ. His restaurants serve elevated takes on Trujillo's family recipes, as well as steakhouse favorites raging from Wagyu beef to fresh caught seafood.
The Coronado location will also offer a special Prime Lunch Hour, which will incorporate elements from the J.T. Bros Handcrafted Sandwiches menu. Expect sandwiches like the Cuba Libre with pulled pork, pork belly, Jack cheese, pickles, mustard and garbanzo spread on a French baguette; Vallarta Special short rib torta with crispy pork belly, avocado, pickled red onions, jalapenos, lettuce, tomato, chipotle mayo and queso fresco on a French baguette; and Chipotle Veggie Patty Melt with a vegatable pattie topped with caramelized onions, mushrooms, melted vegan cheese and chipotle vegan mayo on a French baguette.
