San Diego's vibrant culinary landscape is about to get a sizzling new addition as Sostot, a Korean hot pot rice restaurant, prepares to open in La Jolla.
Solstot is an incoming restaurant from Kyounga Kim that will open later this year in the space that last housed Crispy Chicken N' Tomato and Padadak Korean Chicken within the plaza off Villa La Jolla Drive. At Sostot, diners can expect an immersive culinary experience that highlights the rich flavors and textures of Korean cuisine.
Named after the traditional stone pot used to cook its signature dishes, Solstot will specialize in "dolsot-bap," a beloved Korean dish where rice is cooked and served in a hot stone pot and topped with a variety of ingredients ranging from marinated meats to fresh vegetables, eggs, and savory sauces. The hot stone pot not only keeps the dish warm throughout the meal but also creates a crispy layer of rice at the bottom, known as "nurungji," which is highly prized in Korean cuisine.
The menu at Solstot will feature a variety of dolsot-bap options, including classics like Bibimbap, where rice is topped with seasoned vegetables, sliced meat, and a fried egg, all mixed with gochujang (Korean chili paste). Other offerings will include savory stews, grilled meats, and an array of banchan side dishes that provide a perfect complement to the main courses.
Solstot is expected to open later this year at 8657 Villa La Jolla Drive, Suite 103, in San Diego's La Jolla.
