Founded in 2004 in Boulder, CO, Rush Bowls has grown to more than 50 locations nationwide and has increasingly targeted high-traffic business districts and fitness-oriented neighborhoods for expansion. Its first San Diego store is slated to open soon in Pacific Beach, where it's entering a crowded smoothie and acai bowl market dominated by independent operators. The Sorrento Mesa location signals a shift toward the weekday lunch crowd, offering quick, customizable options for professionals in the nearby tech and biotech corridors.
Corner Office Pizza’s brief tenure in the same space underscores the challenge of drawing consistent foot traffic in an area dominated by office lunch hours rather than steady evening diners. The incoming Rush Bowls aims to capitalize on that same daytime demographic, catering to workers seeking healthy, portable meals.
An opening timeline has not yet been announced, but construction signage has been spotted on the building. Once open, Rush Bowls will offer a wide range of blended bowls, smoothies, and protein-based add-ons featuring ingredients such as acai, mango, banana, peanut butter, and greens.
