Born & Raised Launches Online Reservations For September 13 Opening

It's been almost two years and nearly $7 million in the making but CH Project's largest project to date - Born & Raised - is stated to be near completion, although we checked up on it today and it certainly does not seem like it will be ready in two weeks. Regardless the company has launched online reservations for a September 13 opening!

First announced in October 2015, CH Projects (Ironside Fish & Oyster, Soda & Swine, Underbelly, Noble Experiment, Craft & Commerce, and more) took over the former Nelson Photo Supplies building at 1909 India Street in Little Italy, tore it down, and has been in the process of constructing a 2-story, more than 10,000 square-foot, indoor/outdoor restaurant with the professional assistance of local designer Paul Basile of BASILE Studio. The name ‘Born & Raised’ is derived from CH Projects’ deep-rooted commitment to San Diego, a city that is fully engrained in their core values as an organization.

Born & Raised is meant to pay homage to America’s greatest dining institution, the classic steakhouse. The luxury steakhouse has spared no expense and will offer a mid-century architectural influence with a formal dining room with plush Italian leather booths, a downstairs bar, and a stylish rooftop bar and lounge with its own urban garden.

The culinary program at BaR will be in the hands of longtime CH Projects chef/partner Jason McLeod, with the help of the company's culinary development manager Chef Phil Esteban. Expect a menu of grass-fed steaks from Kansas-based Creekstone Farms, as well as cuts to-go from a retail onsite butcher station with a glass-encased dry-aging room. Steaks will be prepared in a classic Hestan steakhouse broiler or charcoal Spanish Josper oven. Born & Raised will also offer a variety of tableside services, from beef tartare, to caviar, to salads and omelets, and even Wagyu steaks seared within the dining room using a binchotan charcoal grill. They will also offer a tableside dessert cart with a variety of offerings from pastry chef Elizabeth Olson.

Longtime CH Projects mixologist Anthony Schmidt will be in charge of the bar, offering a large selection of Scotch whiskey, an extensive wine list curated by in-house sommelier Rafael Peterson, and a champagne menu that will include suggested caviar pairings. There will also be a specialty cocktail cart devoted to martinis. Of course, local beers will also be offered on tap from behind the bar.

Since CH Projects’s inception in 2009 (formerly dubbed 'Consortium Holdings'), the collective has seen steady growth, now operating twelve hospitality-driven concepts within America's Finest City, with another Soda & Swine location currently being installed on the UCSD campus and a cocktail bar Raised By Wolves heading into Westfield UTC as part of the retail destination's massive overhaul. Born & Raised will be the collective’s fourth restaurant in Little Italy, a neighborhood that has experienced an immense cultural progression with CH as a definite catalyst for growth.
