The Heart & Trotter Whole Animal Butchery Launches its Kickstarter with Whole Animal Dinner at Sea & Smoke | Sept. 16

Today, at 10 a.m. local butchers Trey Nichols and James Holtslag joined a legion of young entrepreneurs in the food industry by launching a Kickstarter campaign to help fund San Diego's first whole animal butchery - The Heart & Trotter Whole Animal Butchery! The duo have a goal of $50,000 in order bring about a sustainable, local butcher shop whose meat has never been injected with hormones, chemicals or antibiotics.

The Heart & Trotter Butchery is set to open in the North Park community of San Diego along restaurant row and have an operational CSA program to service those outside of the North Park neighborhood.

Tonight - Sept. 16 - both butchers will be at Chef Matt Gordon's newest restaurant Sea and Smoke in Del Mar demonstrating how to butcher a forequarter of beef and educate the diners on the benefits of sourcing meat from local ranchers and utilizing the whole animal. This "Turf by the Surf" Butcher's dinner will begin at 6PM at the price of $65 per person and both butchers will be answering questions after the dinner.
