BeShock Ramen & Sake Bar, which first launched in 2016 in San Diego's East Village, has targetted The Shoppes at Carlsbad for its second location, anticipated to open by year's end. The restaurant will join other new additions to the North County retail center, which is undergoing a major renovation, including Texas de Brazil Brazilian Steakhouse, Grubby’s Poke & Fish Market, Breakfast Republic and Wokcano.
BeShock Ramen & Sake Bar co-founder Ayaka Ito, who earned a Sake Master Certification in 2014, spent three years traveling to over 100 ramen houses around Japen to learn about the craft. With her family's support, Ito built her first ramen shop, Three Little Pigs, in her home village of Nagoya, Japen, where she developed many of the recipes that she would eventually bring to downtown San Diego with the 2016 launch of BeShock Ramen & Sake Bar at the corner of Market and 13th Street. Ayaka also recently opened a BeShock Ramen location in Japan.
Ayaka and her partner Masaki Yamauchi have signed a lease on a 1,800 square foot unit next to Lucha Libre within The Shoppes at Carlsbad. Like the downtown location, expect a menu of ramen noodle soups made with a lighter tonkotsu broth slow simmered for 10 hours with a mix of pork, chicken and vegetables. The eatery will also offer vegan options, as well as sushi rolls and starters. There will also be a large list of sakes and beers. BeShock Carlsbad hopes to open by late 2018.
The Shoppes at Carlsbad has been in the process of undergoing a multi-phase renovation of its interiors and streetscapes to transform and enhance the shopping, dining, and entertainment destination. The redevelopment of The Shoppes at Carlsbad includes the addition of brand-new dining tenants, including Grubby’s Poke & Fish Market, Gofruit Juice Bar, Texas de Brazil (November 2018), and as part of the new contemporary restaurant streetscape, there will be locations of Breakfast Republic and Wokcano anticipated to debut this summer.
