Griddle-Your-Own Pancakes Restaurant Flap Your Jacks Opens In San Diego's North Park

Now open in San Diego's North Park community is brunch-focused Flap Your Jacks, a 4,200 square-foot, cook-your-own pancake concept featuring tabletop griddles and an extensive breakfast and brunch menu.

Flap Your Jacks is owned by Ilan & Marcos Wornovitzky, who partnered with 20-year industry and hospitality vet Raul Esses of Mexico City. With an exterior facade meant to resemble syrup pouring down a stack of pancakes, Flap Your Jacks' modern, light filled space gives breakfast and brunch goers a chance to experience an interactive dining experience, with each table outfitted with its own pancake griddle. Upon entry, patrons will be greeted with a unique art installation of hundreds of custom-designed spatulas hanging from the ceiling. There is also mezzanine seating overlooking the main dining room that can accommodate larger parties. The team also took over the adjacent discount cigarette store and is rumored to be installing a 950 square-foot mezcal speakeasy, although it was previously reported to be a future dessert bakery. 

"We are thrilled to be open and love our new home in North Park," said Flap Your Jacks co-owner Marc Wornovitzky. "Our vision was to create a place for guests to have fun, get creative, and spend time connecting with people they care about over a delicious meal. We can’t wait to welcome everyone in to the new space."

The tabletop griddles at North Park's newest morning destination allows guests to F.Y.O. (Flip Your Own) unique pancake creations by choosing from an array of homemade batter flavors like buttermilk, banana bread, red velvet, and peanut butter, just to name a few. Vegan and gluten-free batter options are also available as well as a huge selection of mix-ins, toppings, and syrups. For those not into a do-it-yourself dining experience, the restaurant offers an array of signature and customizable pancake options made in the kitchen, as well as huge menu of breakfast and brunch favorites. The menu has been designed by consulting chef Sergio Howland and includes chilaquiles, Benedicts, a variety of salads and sandwiches, health conscious options, sides, sweets, and a kids menu. There are also fresh squeezed juices and 'energy shots' designed to boost immunity and a full bar with a selection of signature cocktails, Bloody Marys, mimosas, and craft beer. 

During Flap Your Jack’s grand opening week, March 9-15, guests will enjoy free pancake batter (one per table) and can also enter to win free pancakes for a year by sharing their pancake creations on Instagram.
