Jaybird Hard Kombucha aims to convert the masses to a more healthy alcoholic beverage when it opens later this summer in the industrial space that previously housed Longship Brewery in San Diego's Mira Mesa.
From former aerospace engineer Jay Ressler and investment banker Luke Syka, Jaybird Hard Kombucha is a health-conscious hard kombucha brewery and tasting room expected to open as early as August. Ressler will serve as lead brewer after years of trial and error to produce a hard kombucha made with local flavors and no vinegary bite.
"After brewing beer in college, I decided to try my hand at kombucha in late 2017," explained Jaybird Hard Kombucha co-founder Jay Ressler. "I spent around 3 years tinkering with my recipes and formulas until I reached a point where I knew I had created the best-tasting, most drinkable hard kombucha out there. We made it our mission to create the first hard kombucha that non-kombucha drinkers would find delicious as well, and to build a brand to match. You don’t need to be a hippie or a yogi/surfer to like Jaybird Hard Kombucha. Jaybird is a drink for anyone, and we dare our non-kombucha drinking friends to try, because we know they will find it delicious!"
The 4,450 square-foot former Longship Brewery building is in the process of being transformed by Los Angeles based architectural designer Ali Keenan, who will implement a "Maritime-Industrial-Funk" style combining dark industrial accents combined with bright marine-inspired colors. Dubbed 'The Nest', the tasting room will draw inspiration from some of the founders' favorite bars & tap rooms. There will be 20 taps of mostly hard kombucha, including signature flavors jalapeno-strawberry-lime and peach, as well as experimental flavors, non-alcoholic kombucha, and couple handles devoted to local craft beers. The product is all-organic, made with only real ingredients like fresh fruit, with no concentrates or artificial sweeteners. The brewery will snacks in-house, and will have food trucks on Fridays and Saturdays for meals. Eventually, an outdoor area will be built.
