After Nearly Three Decade Tenure, French Master Chef Bernard Guillas Leaves La Jolla Beach & Tennis Club

After nearly three decades as the Executive Chef of La Jolla Beach & Tennis Club's signature restaurant The Marine Room, French Master Chef Bernard Guillas has announced he is leaving the historic beach resort.

"To my beloved members, colleagues, loyal customers and culinary community," reads the announcement by Chef Bernard Guillas. "After 27 years at the La Jolla Beach and Tennis Club, Marine Room, and Shores Restaurant, I have made the decision to hang up my apron and step away as the Executive Chef of the LJBTC to spend more time with my family. My wife Kristi and I welcomed a beautiful baby boy, Jean-Bernard this year. My years of service to all of you has brought me great joy, precious friendships and delicious memories. I am honored to have been a part of so many milestones in each of your lives. I will remember each anniversary, holiday, and special life moments that allowed me to be a part of your family. Creating culinary experiences for all of you was an exciting and rewarding journey."

Since 1994, Chef Bernard Guillas has led the kitchens at La Jolla Beach & Tennis Club’s restaurants, including the Shores Restaurant at the La Jolla Shores Hotel and The Marine Room restaurant. In 2011, Guillas was inducted into the ranks of the Maîtres Cuisiniers de France (Master Chefs of France), an elite organization with only about 200 chef members. A native of Brittany, France, Chef Bernard has appeared in many publications, including Food Arts magazine, on PBS’s Rising Chefs, and the Discovery Channel’s Great Chefs of the World television series. Guillas, along with his former longtime Chef de Cuisine Ron Oliver, is also the author of two cookbooks - Flying Pans, Two Chefs, One World and Two Chefs, One Catch, A Culinary Exploration of Seafood. In 2018, Guillas was inducted into the Academie Culinaire de France, an academy created in 1883 that organizes cooking competitions, exhibitions and conferences in France and abroad.
