Hasekura To Bring Mexican-Inspired Sushi To San Diego's Barrio Logan

Opening soon inside Fish Guts restaurant in San Diego's Barrio Logan is Hasekura, a six-seat, omakase-only sushi perch serving a menu of sustainable seafood dishes inspired by global flavors. 

Earlier this year after nearly 4 years in development, Chef & restaurateur Pablo Becker opened Fish Guts fast-casual, seafood-centric taqueria in San Diego's Barrio Logan. Chef Becker comes from restaurant royalty, having previously operated several restaurants in San Diego, including launching now-shuttered El Vitral in downtown San Diego and opening an outpost of Venga Venga Cantina & Tequila bar in partnership with his cousin and mentor, famed Mexican chef Richard Sandoval. After moving to Chicago for a few years to assist his cousins in the kitchens at their Windy City-based restaurants, the Mexico City-native returned to San Diego several years ago ready to bring something new to America's Finest City.

Becker has now partnered with Chef Ambrely Ouimette, who boasts over 16 years of sushi experience, previously working at Sushi Bar ATX in Austin, Texas and, locally at Ironside Fish & Oyster in San Diego's Little Italy, Saiko Sushi in North Park and Cannonball in Mission Beach. The duo will soon launch an omakase-exclusive sushi concept dubbed Hasekura from inside Fish Guts restaurant. Named after 17th-century Japanese samurai Hasekura Tsunenaga, who was the first Japanese ambassador to the Americas sent to Mexico in early 1600s, the quaint restaurant will only serve six guests at a time from the second story space above Fish Guts.

At Hasekura, Chef Ambrely will serve an ever-changing selection of modern sushi creations using daily fresh catch from San Diego fisherman, as well as some sourced directly from Japan. The quaint eatery will offer two options of omakase tasting menus, a seven course option and another with over a dozen dishes (initially priced at $55 and $125). There will also be the option of sake pairings, as well as beer, wine and agave-wine cocktails. Hasekura will serve two seating per night, Wednesday through Saturday.
