After a long delay, Moto Deli has opened along Highway 101 in the heart of Encinitas. Influenced by the traditional, European delicatessen but with an American spin, Moto Deli is helmed by newly minted Executive Chef Andrew Halvorsen (Stone Brewing, A.R. Valentien) and captures the Leucadian spirit while offering a nod to the time-honored techniques of whole animal butchery and artisanal charcuterie from its intimate 1,200 square-foot space within a 1920s-era building.
