San Diego's Stone Brewing To Finally Break Ground On $26 Million,100,000 Square Foot Escondido-Based Stone Hotel
Stone Hotel has been part of Stone Brewing Co.'s ambitious plans to takeover the craft beer world since at least 2010. The San Diego based 10th-largest-craft-brewer-in-the-world has announced that it has solidified an arrangement to partner with San Diego-based hospitality collective, Untitled Hospitality, to finally break ground in Escondido to build the companies’ first-ever brewery hotel, aiming to open in early 2018. Located on thirteen acres of land adjacent to Stone Brewing World Bistro & Gardens Escondido, the Stone Hotel plans to offer an all-encompassing experience with amenities to captivate craft beer enthusiasts and novices alike, alongside the usual healthy dose of Stone’s disregard for convention.

We recently announced the news that Fig Tree Cafe and Breakfast Republic owner Johan Engman was in the process of opening North Park Breakfast Company, but we also learned that Engman has teamed up with William Lopez of Alternative Strategies Public Relations to open “Como Ceviche” in San Diego's East Village within the space previously occupied by Carnivore Sandwich. This fast-casual eatery is scheduled to open in San Diego’s East Village in early October, and it promises to offer an impressive lineup of authentic ceviche dishes inspired by recipes from Peru, Ecuador, Columbia and Chile.
